Salad Recipe list

Three-bean mackerel salad

Ingredients - serves 4
- 1 x 410g tin cannellini beans in water, drained & rinsed
- 1 x 410g tin chick peas in water, drained & rinsed
- 1 x 410g tin butter beans in water, drained & rinsed
- 1/2 red onion, peeled & finely chopped
- 2 x 125g tins mackerel fillets in tomato sauce, flaked
- 6 white pittas, toasted & halved
- 4 tablespoons olive oil
- 2 tablespoons vinegar
- 1 teaspoon mustard


Method

1. Put all the beans into a bowl. Add the onion and the flaked mackerel. Mix well.
2. In a separate bowl whisk together the oil, vinegar and mustard. Season to taste. Stir the dressing through and serve with the toasted pittas.

Alternative: Try swapping the mackerel for torn pieces of mozzarella.
